A small 28-seat ramen shop in Manhattan's East Village has been awarded its first Michelin star, making it one of only a handful of ramen restaurants worldwide to receive the distinction. Chef Yuki Tanaka spent two years perfecting a tonkotsu broth that simmers for 36 hours using heritage pork bones.

The restaurant, which opened in 2024, is known for its meticulous attention to detail, from house-made noodles with custom flour blends to chashu pork braised in a soy-mirin glaze. Reservations are now booked solid through the summer.
