Fresh pasta is one of the simplest and most impressive things you can make at home. All you need is flour, eggs, a rolling pin, and 30 minutes.
Basic Egg Pasta Dough
- 2 cups (250g) all-purpose flour or "00" flour
- 3 large eggs
- 1 tbsp olive oil
- Pinch of salt
Method
Step 1: Mound flour on a clean surface. Make a well in the center. Add eggs, oil, and salt to the well.
Step 2: Using a fork, gradually incorporate flour from the walls of the well into the egg mixture until a shaggy dough forms.
Step 3: Knead by hand for 8-10 minutes until smooth and elastic. The dough should feel like Play-Doh.
Step 4: Wrap in plastic and rest 30 minutes at room temperature.
Step 5: Roll thin (1/16 inch) with a rolling pin. Dust with flour and fold loosely. Cut to desired width with a sharp knife. Unfurl and toss with semolina.
Cooking: Fresh pasta cooks in 2-3 minutes in salted boiling water. Toss immediately with your sauce.
