Industry leaders credit improved technology for the surge, noting that the latest generation of plant-based seafood closely replicates the flaky texture and briny flavor of real fish. Algae-derived omega-3 fortification has also addressed previous nutritional criticisms of the category.

Major restaurant chains have begun incorporating these products into their menus, with several fast-casual brands launching dedicated plant-based seafood bowls and sandwiches this spring.
