A well-seasoned cast iron skillet is the most versatile tool in your kitchen. It lasts generations, provides perfect searing, and gets better with age. Here's how to maintain it properly.
Initial Seasoning
Step 1: Wash with soap and water (yes, soap is fine). Dry completely — this is critical.
Step 2: Apply a thin layer of flaxseed oil, vegetable oil, or Crisco to the entire pan including the outside and handle.
Step 3: Wipe off ALL excess oil with a paper towel until the pan looks dry. Too much oil creates sticky spots.
Step 4: Place upside down in a 500°F oven for 1 hour. Let cool in the oven.
Step 5: Repeat 3-4 times for a bombproof initial seasoning.
Daily Maintenance
- Cook with it frequently — regular use builds seasoning
- Clean with hot water and a brush. Soap is fine occasionally.
- Dry immediately and thoroughly
- Apply a light coat of oil after each use
- Store in a dry place (moisture is the enemy)
Restoring a Rusty Skillet
Scrub with steel wool, wash, dry, and re-season. Cast iron is nearly indestructible — even badly rusted pans can be restored to like-new condition.
